AOP Cabardès in a few words

AOC Cabardès is a rather confidential AOC. Located in the Languedoc-Roussillon region near Carcassonne, it produces wines, mostly red, on 450 hectares in 18 communes.

The slopes of Cabardès vineyards are located on the southern flanks of the Montagne Noire. The soils are predominantly either limestone or schist. The AOC, recognized since 1999, allows the use of several families of grape varieties: on the one hand cabernet-sauvignon, cabernet franc and merlot (minimum 40% and up to 60%), on the other syrah and grenache (minimum 40% and up to 60%) and finally cot, fer servadou and cinsaut, which can represent up to 20% of the blends.

Cabardès is a wine region with a long tradition of winemaking.
