Le domaine Louis Chenu Père & Filles is a family-run winery in Savigny-les-Beaune, Burgundy.The family has been cultivating vines and raising wine for five generations now.The first vineyard plots were bought in 1914, and are farmed today by Louis, assisted by his wife and daughters.The wines are endowed with fine finesse and porgress from year to year. A well-balanced, gourmet Burgundy. Domaine Louis Chenu is in conversion to organic farming. All the work in the vineyard, throughout the seasons, is carried out by the family (pruning, vine shoot burning, ploughing, lifting, trimming, treatments, green harvesting), as is the maturing of the wine (filling, racking, fining). Harvesting is done by hand, and lasts about a week. Vinification is traditional: the grapes are destemmed, crushed, cold-macerated for a few days and then racked daily. Fermentation is natural, and vinification temperatures are not high. After a vatting period of around 2 weeks, the wines are cellared and aged for 18 months.

The Chorey-les-Beaune is tender and greedy: it's a wine all velvet.

They have since converted their entire vineyard to organic farming. Exotic fruit, pear, white flowers, hazelnut, a touch of minerality, the bouquet is complex and elegant. Supple, ample and silky, the palate is perfectly balanced between fat and acidity, ending on a long, saline note. The "coup de coeur" was put to the vote. Sea bass fillet with beurre blanc."
