L'AOP Monbazillac organic wines are produced in the wine-growing region of southwest France, more precisely in the Monbazillac appellation, located near the town of Bergerac in the Dordogne. The grapes used to produce Monbazillac are Semillon, Sauvignon Blanc and Muscadelle, which are often affected by noble rot, a fungus that concentrates sugars and aromas in the grapes. The winemaking process involves slow, cool fermentation, followed by aging in oak barrels for several months, giving the wine its rich, creamy texture and complex flavors of candied fruit, honey, spice and hazelnut.
According to figures from the Comité Interprofessionnel des Vins de Monbazillac (CIVB), the Monbazillac appellation comprises around 1,500 hectares of vineyards. This represents an annual production of around 40,000 hectoliters of wine, of which around 60% is exported worldwide.
