The history of Macvin du Jura dates back to the Middle Ages, long before the appellation was officially recognized. At a time when climatic conditions sometimes made it difficult to fully vinify grapes, Jura winemakers developed an original technique of blending unfermented grape must with fine du Jura, a locally distilled brandy made from marc or wine. This process preserved the grapes' natural sugars while stabilizing the product. This practice, handed down from generation to generation, has survived the centuries to become one of the strongest symbols of the Jura winegrowing identity.

The AOP Macvin du Jura is made exclusively from grapes grown in Jura appellations, guaranteeing a close link with the terroir. The authorized grape varieties reflect the diversity of the Jura vineyards. Chardonnay and Savagnin are used for white Macvins, offering rich, complex aromatic expression. Red and rosé Macvins are made from Poulsard, Trousseau and Pinot Noir grapes. This variety-terroir plurality gives Macvin du Jura an exceptional aromatic palette, ranging from fruity freshness to deeper, spicier notes.

The Jura terroir plays a fundamental role in the identity of Macvin du Jura. The grapes come mainly from marly soils, rich in clay and limestone, which give the musts a natural density and concentration. The semi-continental climate, marked by cold winters and hot summers, favors slow ripening of the grapes and gradual accumulation of sugars, an essential condition for producing a balanced, expressive Macvin. These natural conditions, combined with human know-how, give rise to Macvins of great aromatic intensity, never heavy, always carried by a structuring freshness.

Organic viticulture is playing an increasingly important role in the AOP Macvin du Jura. Many estates committed to organic and biodynamic farming see Macvin as a natural extension of their approach. Respectful vineyard cultivation yields healthy, concentrated and expressive grapes, essential to the production of a high-precision liqueur wine. The absence of synthetic products, controlled yields and manual harvesting all contribute to the quality and sincerity of the final product.

The method for making Macvin du Jura is based on a simple but demanding principle. Freshly-pressed grape must is blended with fine du Jura titrating a minimum of 52 degrees, which blocks alcoholic fermentation and preserves the grapes' natural sugars. The blend is then aged for a minimum of twelve months, often longer depending on the winemaker's choice, in barrels or vats. This aging allows the Macvin to gain in complexity, harmony and aromatic depth, while retaining the brightness of the fruit.

Jura White Macvins are distinguished by their aromatic richness and remarkable balance. They develop notes of yellow fruit, quince, honey and sometimes dried fruit, supported by a fresh, elegant structure. Savagnin provides structure and length, while Chardonnay confers roundness and finesse. The Red and rosé Macvins, meanwhile, offer a more fruity, gourmet expression, marked by aromas of cherry, raspberry, black fruit and sweet spices. Their palate is ample, velvety, but always balanced by a natural acidity that avoids any heaviness.
