Viticulture in Cassis dates back to antiquity. The Phocaeans and then the Romans very early on identified the potential of this exceptional terroir, both bright and ventilated, protected from climatic excesses by the surrounding relief. Over the centuries, vines have become an essential part of the Cassiden landscape, despite the pressure on land due to its proximity to the coast. The rapid recognition of the AOP Cassis is part of a strong desire to preserve this unique vineyard and guarantee a high level of standards, both in the vineyard and in the cellar.

The AOP Cassis vineyard extends over a small area, just over 200 hectares, spread over terraces and hillsides overlooking the sea. The soils are mainly limestone and marl-limestone, sometimes mixed with scree from the surrounding cliffs. This mineral nature, combined with excellent drainage capacity, favors deep rooting and contributes to the finesse and tension of the wines. The immediate proximity of the Mediterranean plays a decisive role in the thermal regulation and aromatic expression of the grapes.

The climate of the AOP Cassis is resolutely Mediterranean, tempered by the maritime influence. Summers are hot but rarely excessive, winters mild, and regular sea breezes ensure constant ventilation of the vineyard. This air circulation limits health risks and ensures gradual, even ripening of the grapes. Thermal amplitudes, though moderate, are enough to preserve the balance between ripeness, freshness and aromatic expression.

The AOP Cassis is predominantly planted with white grape varieties, which account for the bulk of production. Marsanne and Clairette form the historical basis of the blends, contributing structure, complexity and aromatic finesse respectively. They are complemented by Ugni Blanc and Sauvignon Blanc, which add freshness, vivacity and precision to the wines. Red and rosé wines, which are more confidential, are mainly based on Grenache and Mourvèdre, sometimes combined with Cinsault.

The white wines of the AOP Cassis are the very identity of the appellation. Their color is generally pale and luminous, the nose develops subtle aromas of white flowers, citrus, white-fleshed fruit and characteristic iodine notes. On the palate, the balance between fullness and tension is remarkable, underpinned by saline minerality and a lingering finish. These whites possess an often underestimated aptitude for aging, gaining in complexity with a few years of cellaring.

The rosé wines of the AOP Cassis are distinguished by their elegance and freshness. Their aromatic expression blends delicate red fruit, citrus and floral notes, with a fine, structured and refreshing palate. A far cry from standardized rosés, they faithfully reflect the maritime influence of the terroir.

The red wines of the AOP Cassis, produced in very limited volumes, offer supple, balanced profiles. Aromas of ripe red fruits, sweet spices and garrigue are expressed with restraint, while the palate favors fine tannins and drinkability, in keeping with the appellation's overall identity.

The winegrowing methods used to produce these red wines are based on the principles of organic viticulture.

Organic viticulture is playing an increasingly important role in the AOP Cassis. Several estates are engaged in organic farming or conversion, driven by favorable natural conditions and a shared desire to preserve a fragile and exceptional environment. Working the soil, limiting inputs, protecting biodiversity and striving for natural balance are the major thrusts of the winemakers' quality approach.

In the cellar, winemaking practices favor precision and discretion. Fermentations are controlled to preserve aromatic purity, ageing is carried out mainly in vats or neutral containers, and the use of wood remains measured. This approach aims to let the terroir and maritime influence express themselves fully, without artifice.

The food and wine pairings with AOP Cassis are naturally oriented towards marine gastronomy. White wines are ideal with noble fish, shellfish, bouillabaisse and refined Mediterranean cuisine. Rosés go well with summer cuisine, sun-drenched vegetables and marine-influenced dishes. Reds find their place with white meats, light grilled meats and traditional Provencal recipes.
