The Chablis PDO in a nutshell
Chablis represents the very image of French wine, fine and elegant, often imitated abroad but never equaled... A unique terroir is not so easily copied.
The Chablis terroir is marked by Kimmeridgian limestone soil and a cooler climate than the rest of Burgundy. Chablis white wines are therefore straight, slender and elegant. Chablis is both a village and an AOC. The best Chablis wines are produced on the best exposed slopes and are awarded the AOC Chablis premier cru and grand cru. Lesser terroirs are given the AOC Petit Chablis. All Chablis whites are made from the Chardonnay grape, which expresses itself in a very mineral form.
