Domaine Desvignes: Red and white Givry from the Côte Chalonnaise, in the process of converting to organic farming

The Domaine Desvignes is a family-owned winery in Givry, in the heart of the Côte Chalonnaise, in Burgundy. Gautier Desvignes produces elegant and refined Pinot Noirs and Chardonnays there, a far cry from the rustic style once associated with the appellation. Discover three wines made from vines cultivated with respect for the soil, currently in the process of transitioning to organic farming.

The Estate’s History

The estate has been in the Desvignes family for several generations. After working in other wine regions and abroad, Gautier Desvignes returned to take over from his father. In the past, the estate’s production was sold to wine merchants in the Côte-d’Or. Under Gautier’s leadership, the estate now vinifies and bottles its own wines.

The Givry Terroir

Givry is an appellation in the Côte Chalonnaise, which primarily produces red wines made from Pinot Noir and, more rarely, white wines made from Chardonnay. The clay-limestone soils in the southern part of the appellation lend the wines freshness and minerality. Around the hamlet of Poncey, the estate’s plots alternate between hillsides and the foothills.

Carefully Replanted Vines

Gautier had a large portion of the vineyard replanted with “Pinot Fin” clones, which yield low yields and small berries, resulting in more concentrated fruit. He has eliminated synthetic chemicals and practices soil cultivation. The grapes are harvested by hand. The estate is in the process of converting to organic farming.

Winemaking

The grapes are sorted, and for the reds, completely destemmed. The wines are aged in oak barrels, with minimal new oak, to preserve the fruit and freshness.

The estate’s wines

Givry Red La Dame 2023 is a Pinot Noir from the Champ La Dame vineyard, located in the southwestern part of the appellation. Precise and elegant, it offers notes of cherry and black fruits, freshness, and fine tannins.

Givry blanc En Chenèves 2024 is a Chardonnay from a lieu-dit at the foot of the Givry slope. Fresh and mineral, it offers notes of citrus and stone fruits, with a lively finish.

Givry Red 1er Cru Grande Berge 2023 is a 1er Cru Pinot Noir—mineral and energetic—with floral and red fruit notes and a long finish. It is in the process of converting to organic farming.

Which wine should you choose?

For a crisp white as an aperitif or with fish, choose En Chenèves. For a precise and rich Burgundy red, La Dame is the perfect introduction. For a special occasion or for your wine cellar, Grande Berge, the 1er cru, is the cuvée to keep.

Food and Wine Pairings

The white pairs well with roast chicken, grilled white fish, and goat cheese. The reds pair well with roast poultry, duck, red meat, and aged cheeses.
