Pouillon Champagne is produced by the eponymous domaine, located in Saint-Pierre-du-Mont, in the Marne region of France. The estate is run by Fabrice Pouillon, who took over the family business in 2003.
The Pouillon estate cultivates 12 hectares of vines, spread over 20 parcels, located in the communes of Saint-Pierre-du-Mont, Trépail and Épernay. The vines are planted with 70% Chardonnay, 25% Pinot Noir and 5% Pinot Meunier.

Alcoholic and malolactic fermentation take place in stainless steel tanks. Aging takes place in underground cellars, on fine lees, for at least 18 months.
