Domaine Pattes Loup

A few words about Domaine Patte Loup

Thomas Pico, who runs the domaine Patte Loup, is a young man in his thirties who has been quick to make a name for himself in Chablis. Running his organic estate since 2009, Thomas Pico produces some of the finest Chablis in the AOC. The ripeness is sought-after, while retaining beautiful balance and real freshness. An estate to be discovered urgently.

Located in Courgis, the domaine Patte Loup covers around 8 hectares and stands out for its commitment to organic farming and its relentless quest for the pure expression of terroir. In 2005, Thomas Pico began converting his vineyards to organic farming, obtaining certification in 2009. This pioneering step in the region reflects a desire to respect the environment and produce authentic wines that faithfully reflect the Chablis terroir. The vines of Domaine Pattes Loup are planted on clay-limestone soils typical of Chablis, with a predominance of Kimmeridgian marl. These soils give the wines a distinctive minerality and remarkable aromatic depth.

Thomas Pico favors manual harvesting and vinification with indigenous yeasts. He limits the use of inputs and practices prolonged ageing, often in barrels and then in vats, to allow the wines to develop their complexity and precision.

Thomas Pico's approach to winemaking is based on the following principles.

The Chablis village Vent d'ange from the domaine Patte Loup possesses beautiful substance, mache, without falling into heaviness.

The 1er cru Les Butteaux proves to be the fattest Chablis from domaine Patte Loup, with superb substance.

The 1er cru Beauregard from the domaine Patte Loup is not to be outdone, declining on yellow fruit aromas, being endowed with a beautiful persistent finish.

The domaine Patte Loup produces great organic wines that are already in great demand. Quantities are limited.Guide des meilleurs vins de France 2020 about domaine Patte Loup: 2-star domaine.
