This long history culminated in the creation of the Crémant du Jura AOC in 1995, enshrining specific know-how and a collective desire to promote quality sparkling wines, deeply rooted in their terroir. Today, the AOP Crémant du Jura represents a significant share of regional wine production and plays a central role in the influence of the Jura vineyards.

The AOP Crémant du Jura vineyards stretch across the entire Jura appellation area, mainly on east- and south-facing slopes, favorable to gradual ripening of the grapes. The soils, composed of marl, limestone and scree, form one of the foundations of the wines' identity. This geological diversity makes it possible to obtain balanced wine bases, combining tension, aromatic finesse and structure, essential elements in the elaboration of great sparkling wines.

The semi-continental Jura climate strongly influences the style of Crémant du Jura. Cold winters and moderately hot summers, combined with marked thermal amplitudes, favor the preservation of high natural acidity in the grapes. This freshness is a major asset for the setting of foam and the final balance of the wines. The vintages accurately reflect climatic variations, reinforcing the lively, authentic character of the cuvées.

The AOP Crémant du Jura is distinguished by the richness of its grape varieties. Chardonnay takes center stage, bringing finesse, elegance and floral notes. Pinot Noir contributes to the structure and depth of the cuvées, while Poulsard and Trousseau, emblematic grape varieties of the Jura, confer originality and singular aromatic expression. Savagnin, used more occasionally, adds tension and complexity, reinforcing the link between crémant and Jura identity.

Jura is among the French regions most committed to organic farming, and this dynamic is fully reflected in Crémant production. Many estates work organically or biodynamically, respecting the soil, limiting inputs and carefully observing the vines. The vinification of Crémant du Jura is based on the traditional method, with a second fermentation in the bottle and extended aging on lees. Grapes are harvested relatively early to preserve freshness and acidity. Pressings are gentle, fermentations are controlled, and blending is precise to ensure balanced, coherent cuvées. The Crémants du Jura blancs are characterized by their finesse and freshness. They offer aromas of white-fleshed fruit, citrus and flowers, sometimes complemented by brioche and toasted notes resulting from aging on lees. On the palate, the mousse is delicate, the structure taut and the finish long and refreshing. Cuvées from organic farming are often distinguished by a particular energy and a clearer expression of terroir.

A superb Crémant du Jura porduced by the domaine Tissot. An airy Crémant with notes of white fruit. The nose develops pretty floral aromas of lime blossom and jasmine, followed by brioche notes. Refreshing and fruity, the palate offers lovely minerality with fine, stimulating bubbles. The finish is salivating and juicy.
