AOP Bouzeron

The Appellation d'Origine Protégée (AOP) Bouzeron is unique in Burgundy, being the only appellation in the region dedicated exclusively to the grape Aligoté. Located in the Côte Chalonnaise region, this appellation highlights the exceptional qualities of this often overlooked grape variety, producing fresh, mineral and elegant white wines.

Bouzeron is a small wine-producing village located in the Côte Chalonnaise, south of the Côte de Beaune. The appellation covers around 55 hectares of vineyards, mainly located on well-exposed hillsides. Bouzeron's soils are predominantly marl and limestone, typical of Burgundy, offering excellent drainage and a distinctive minerality. The vineyards benefit from optimal sun exposure, enabling good ripening of the grapes and the production of wines of great freshness and complexity.

The Bouzeron PDO is exclusively dedicated to the production of white wines from the Aligoté grape variety. This grape variety, often overshadowed by Chardonnay in Burgundy, reveals its full potential here. Bouzeron wines are distinguished by their aromas of white flowers, citrus and white-fleshed fruit (apple, pear), with mineral notes and sometimes a touch of hazelnut. On the palate, they are fresh, lively and well-balanced, with marked acidity and lovely minerality, offering a persistent, refreshing finish.

The Bouzeron PDO covers around 55 hectares of vineyards, with relatively modest annual production, enabling high quality to be maintained. Annual production varies, but is generally around 2,500 hectoliters, or about 330,000 bottles. This limited production contributes to the rarity and exclusivity of Bouzeron wines.

A growing number of Bouzeron producers are adopting organic or biodynamic viticulture practices. These approaches aim to preserve the environment, enhance biodiversity and produce more authentic, expressive wines. Practices include the use of organic composts, the reduction or elimination of synthetic chemicals, and manual tilling of the soil. The organic approach also enhances the health of the soil and vines, contributing to the quality and typicity of the Aligoté wines produced at Bouzeron.

Their freshness, minerality and aromatic complexity make them ideal for accompanying a variety of dishes, from seafood to fresh cheeses.
