Fitou: emblematic Languedoc organic wines

A historic terroir between sea and mountains

The AOP Fitou is the oldest recognized wine appellation in Languedoc (1932). It extends over two distinct areas in the Aude: the Fitou maritime, close to the Mediterranean, and the Fitou hautes-corbieres, nestled in the cooler hinterland. This duality lends the wines a unique richness and diversity.

The Mediterranean climate, with its hot summers, mild winters and the tramontana that naturally cleanses the vines, favors optimal grape ripening. The soils - schist, limestone, sandy-clay - each bring their own signature, ranging from solar power to mineral elegance.

Powerful, generous organic red wines

The AOP Fitou is dedicated exclusively to red wines. The main grape varieties are:

  • Carignan: a historic Languedoc grape variety, it provides structure, freshness and typicity.

  • Grenache Noir: generous and warm, it confers roundness and fruity intensity.

  • Syrah: adds color, spicy notes and aromatic depth.

  • Mourvèdre: fine tannins, long finish and excellent cellaring potential.

The Fitou organic wines are characterized by intense aromas of ripe black fruits (blackberry, blackcurrant, plum), spices (pepper, licorice, cinnamon), garrigue (rosemary, thyme, laurel) and sometimes hints of cocoa or leather. On the palate, they combine Mediterranean power, concentration and round tannins, for tasty, generous cuvées.

The Fitou organic red wines are cut out to accompany generous, flavorful dishes. Thanks to their power and elegant tannins, they go perfectly with:

  • Grilled meats: rib of beef, leg of lamb, entrecôte.

  • Stewed dishes: cassoulet, beef stew, wild boar stew.

  • Mediterranean specialties: tagines, olive dishes, candied vegetables.

  • Aged cheeses: roquefort, Pyrenean tomme, old comté.

Some more structured Fitou wines can be cellared for 5 to 15 years, developing notes of leather, truffle and sweet spices.
