The domaine Gauby, located twenty kilometers northwest of Perpignan, covers around 85 hectares, including 45 hectares of vines that can reach 120 years of age. Domaine Gauby works according to biodynamic methods, producing some of the most ambitious wines in the Roussillon region.Domaine Gauby's work consists of respecting the environment, taking nature as an ally and source of inspiration by referring to several cultures, leaving aside chemical and synthetic products and using "homemade" plant-based preparations (over twenty) and other natural products such as essential oils, compost, etc.Les Calcinaires corresponds to the estate's entry-level wines. The wines are crafted with the same care as the finest cuvées. The red and white wines are well-balanced and fresh, in the style of Domaine Gauby. Domaine Gauby's cuvée Vieilles Vignes is more complex. La Muntada is a benchmark among Roussillon wines. This grand cuvée de garde from Domaine Gauby is powerful, racy and very long on the palate; it has nevertheless evolved in recent vintages and knows how to retain freshness and elegance.

He has gone through several periods of questioning, which have gradually led him to a style of taut, easily digestible red and white wines that have won him many admirers. Never free from risk-taking, this ongoing research, which in recent vintages, under Lionel's impetus, has given primacy to the expressiveness and generosity of the fruit, reveals the complexity of Calce's geologically varied terroir. Through relentless work on the soil and vines, as well as the replanting of numerous tree species at the edges of the plots, phenolic ripeness is achieved more rapidly, enabling alcoholic degrees to be moderated.
