A magnificent white Roussillon without any heaviness to accompany a carpaccio of scallops with citrus fruits, for example.Domaine Gauby, located twenty kilometers northwest of Perpignan, covers some 85 hectares, including 45 hectares of vines that can be up to 12 years old. The estate works according to biodynamic methods and produces some of the most ambitious wines in the Roussillon.
