The AOP Maury is an emblematic Roussillon appellation, nestled in the Agly valley northwest of Perpignan. Its black and brown schist slopes give the wines a rare depth and identity. Protected by the foothills of the Corbières mountains and the Pyrenees, the appellation benefits from a warm, dry Mediterranean climate, tempered by the tramontane, which naturally cleanses the vines.
.This combination - poor soils, solar climate and thermal amplitude - enables the grapes to reach exceptional ripeness, producing rich, powerful and balanced wines.
The AOP Maury is best known for its Vins Doux Naturels (VDN), made mainly from Grenache Noir. These unique wines, obtained by mutage (adding alcohol to stop fermentation), preserve the grape's natural sugar while offering unrivalled aromatic richness.
Maury grenat: on the fruit, with aromas of cherry, blackberry, blackcurrant and a gourmet palate.
Maury tuilé: barrel-aged, it develops notes of cocoa, fig, candied fruit and spices.
Maury blanc: made from white or grey Grenache, it seduces with aromas of honey, almond and dried fruit.
Maury rancio: aged for a long time in an oxidative environment, it reveals complex notes of nuts, roasting and spices.
For some years now, the appellation has also been producing dry red wines, still dominated by Grenache, often blended with Syrah, Mourvèdre or Carignan. These organic cuvées offer power, black fruits and spices, with great ageing potential.

The AOP Maury estates we select practice demanding organic viticulture. The vines are cultivated without synthetic chemicals, respecting the soil and biodiversity. Manual labor remains predominant, guaranteeing optimal grape quality.
This organic approach enhances the aromatic purity of Maury wines and enables them to faithfully reflect the richness of their unique terroir.

The organic Maury wines lend themselves to many gastronomic pairings:
Maury doux grenat: perfect with chocolate fondant, red fruit tart or simply a square of dark chocolate.
Maury tuilé or rancio: ideal with blue cheeses (Roquefort, Bleu d'Auvergne), dried fruit desserts or dishes in spicy sauce.
Maury blanc: goes wonderfully with foie gras, fish in sauce or almond-based desserts.
Maury rouge sec: goes well with roasted meats, lamb tagine, cassoulet or mature cheeses.

La Cerisaie is a magnificent Maury from the domaine des Schistes, made from grapes aged at least 40 years and located on the southernmost slopes, favoring a beautiful ripeness of the grenache. Aged in barrels for 5 months, it reveals notes of cocoa and prunes. The ideal match for chocolate cakes!
