The history of the AOP Château-Chalon goes back several centuries. As early as the Middle Ages, Benedictine monks identified this exceptional site as a prime location for growing Savagnin grapes and making wines for ageing. The reputation of Château-Chalon wines quickly spread beyond regional and then national borders, thanks to their exceptional ageing capacity and unique aromatic profile. In 1936, Château-Chalon became one of the very first appellations d'origine contrôlée to be recognized in France, officially consecrating an ancestral know-how and an exceptional terroir.
The vineyards of the AOP Château-Chalon are extremely rare. It extends over just over fifty hectares, exclusively located around the eponymous village and spread over steep hillsides with predominantly south and south-west exposure. The vines are planted on soils of grey Lias marl, rich in clay and limestone, resting on a complex subsoil that plays a decisive role in the expression of Vin Jaune. These marls give the wines incomparable structure, depth and salinity, while also promoting the development of the veil during aging.
The climate of the AOP Château-Chalon is semi-continental, with harsh winters and hot summers, but often punctuated by stormy episodes. This climatic variability makes each vintage uncertain and imposes a drastic selection process. Every year, Vin Jaune cannot be produced, and when conditions are not deemed optimal, the wines are downgraded to Côtes du Jura or Arbois. This extreme requirement contributes to the appellation's rarity and prestige.

After classic alcoholic fermentation, the wine is aged in unoaked oak barrels for a minimum of six years and three months. During this period, a veil of yeast forms naturally on the surface of the wine, partially protecting it from oxidation while promoting the development of complex aromas. No intervention is allowed to correct or mask the wine, and only the test of time reveals its true nature.
The wines of the Château-Chalon PDO are distinguished by exceptional aromatic complexity. The nose develops intense notes of fresh walnut, dried fruit, curry, saffron, spices, baked apple and undergrowth.
