The IGP Coteaux d'Ensérune lies in the western part of the Languedoc region, between Béziers, the Canal du Midi and the first reliefs dominating the Biterroise plain. This wine-growing territory, marked by the ancient history of the vine and a singular geography, takes its name from the Ensérune oppidum, an emblematic site overlooking ponds and ancient roadways. Vines occupy a structuring place here, integrated into a landscape of gentle hills, plateaus and terraces.
The vineyards are mainly planted on gently undulating hillsides, benefiting from favorable sun exposure and moderate maritime influence. The proximity of the Mediterranean brings constant brightness and regular breezes that temper the intense summer heat. These climatic conditions favor even ripening of the grapes, while preserving a certain freshness, essential to the balance of the wines.
The soils of the Coteaux d'Ensérune are one of the foundations of the identity of PGI wines. They are mostly composed of clay-limestone formations, rolled pebbles and stony terraces derived from ancient deposits of the Orb and Hérault rivers. These draining soils naturally limit vine vigor and encourage deep rooting, contributing to regular ripening and measured concentration of the grapes.

Red and rosé grape varieties are mainly Grenache, Syrah, Carignan and Cinsault, while whites feature Grenache Blanc, Rolle, Roussanne and Viognier. This diversity enables us to produce wines with varied profiles, ranging from supple, accessible cuvées to more structured, complex expressions.
The organic viticulture, which is very present in the Coteaux d'Ensérune PGI, is based on careful observation of the vines and practices that promote soil life. Mechanical work, controlled grassing and limited inputs help preserve the natural balance of the plots. This approach results in healthy, expressive grapes, an indispensable basis for vinifications that respect the terroir's identity.
In the cellar, vinification favors precision and simplicity. Fermentations are often carried out with indigenous yeasts, extractions are adapted to the ripeness of the grapes, and ageing aims to preserve the purity of the fruit. On tasting, the red wines of IGP Coteaux d'Ensérune are characterized by their roundness and direct aromatic expression. Ripe red and black fruit aromas are frequently accompanied by spicy, Mediterranean notes. The palate is supple, with mellow tannins and a balanced finish. The whites offer luminous profiles, marked by white-fleshed fruit, citrus and sometimes a slight saline touch. Rosés emphasize freshness and drinkability, while retaining a certain depth.
