Since 2010, the estate has been certified organic, a choice in keeping with a broader philosophy of respect for soils and ecosystems.

Biodynamics also plays a central role on the estate. Inspired by the principles of Rudolf Steiner, this method involves cultivating the vines taking into account lunar and solar cycles, using natural plant-based preparations to strengthen the vines, and promoting biodiversity. This maintains soil health and encourages balanced vine growth. The granite soils of the Côte Roannaise, combined with biodynamic practices, give Domaine Sérol wines exceptional minerality and freshness. Every intervention, whether manual work in the vines or vinification in the cellar, is carried out with care, respecting natural rhythms. The Domaine Sérol offers a range of organic wines that reflect all the diversity and richness of its terroir, with a particular focus on the Gamay Saint-Romain grape variety. Among the most emblematic cuvées are Éclat de Granite, Les Millerands, Perdrizière, and Turbullent.

The Eclat de Granite cuvée is a pure expression of the granite terroir of the Côte Roannaise. Made from old Gamay Saint-Romain vines, this cuvée is vinified naturally to preserve the freshness and minerality of the fruit. This organic wine reveals intense aromas of red fruits such as raspberry and cherry, combined with spicy and slightly peppery notes. On the palate, it is lively, structured and elegant, with good length. It goes perfectly with grilled meats, roast poultry or charcuterie dishes.

Les Millerands is a rare cuvée, made from parcel selections of Gamay Saint-Romain. This organic wine stands out for its aromatic concentration and complexity. On tasting, it reveals aromas of black fruit, licorice and undergrowth, with a fine tannic structure and great freshness. On the palate, this wine is powerful yet refined, with good length. It's perfect for accompanying simmered dishes, red meats or game.

The cuvée Perdrizieres is a tribute to Domaine Sérol's highest-quality terroirs. This organic red wine, produced from Gamay Saint-Romain vines planted on granite soils, is rich and expressive. It reveals complex aromas of ripe fruit, black pepper and garrigue. On the palate, it is generous, with velvety tannins and good acidity. Perdrizière is a wine for laying down, which will pair wonderfully with dishes in sauce or braised meats.

Turbullent is a natural sparkling wine (pet-nat) produced using an ancestral method. This organic sparkling rosé is made from Gamay Saint-Romain grapes and is distinguished by its light bubbles and freshness. It reveals aromas of fresh red fruit and a lively mouthfeel. It's an ideal wine for the aperitif, or to accompany light fruit-based desserts.
