The Domaine d'Aupilhac in a few words...

Sylvain Fadat brilliantly directs the domaine d'Aupilhac, which produces great organic wines in the côteaux du Languedoc. This Languedoc organic estate is located on the terroir of Montpeyroux (south-facing vineyards) and on the recently replanted, higher, north-facing terroir of Les Cocalières. Domaine d'Aupilhac's biodynamic wines are rich, luscious and balanced; they come through the years with great ease.

The domaine d'Aupilhac is now a sure bet in Languedoc Roussillon. Sylvain Fadat believes that the work done in the vineyards (ploughing, green harvesting, working organically...) has more influence than the vinification on the final result, and we can only agree when we taste his organic wines: beautiful respect for the fruit, beautiful enhancement by the wood. Congratulations!

Sylvain Fadat had the excellent idea in 2002 of planting vines on the magnificent Cocalières terroir. Situated at a higher altitude than the rest of the estate's vineyards, Sylvain literally dynamited a plot to break up a slab of rock just below the land. He then planted vines to produce great reds and whites. The elegance of this cuvée and its great ageing potential are thrilling!

Sylvain Fadat was elected winemaker of the year in 2022 by the Revue des vins de France.

Both the cuvées resulting from parcel selections and the "generic" wines (Lou Maset) are skilfully mastered, always imbued with freshness. Sylvain Fadat, supported by his devoted wife, now offers a wide and homogeneous range of highly expressive wines. This production has now found its cruising speed, with more subtle ageing than in the past on the great cuvées, which regularly reach heights of charm and expressiveness."

Les cuvées du domaine d'Aupilhac

The cuvée Lou Maset is a lovely thirst-quenching red, to be drunk over 2 years.

Monpeyroux, du domaine d'Aupilhac is made from old vines, facing south. This organic wine is rich, with notes of black fruit and garrigue.

The Cocalières red cuvée comes from terroirs at higher altitudes. This wine, made from younger vines, has great balance and finesse. It should be drunk over 5-7 years.

Cocalières blanc du domaine d'Aupilhac is a great white from the Southeast. It develops notes of yellow fruit, while retaining the freshness of its terroir. A great bottle.

Le Carignan is one of the estate's flagship cuvées: a biodynamic 100% Carignan wine, cut to last the ages. Those smoky notes are bewitching.

The red Boda from Domaine d'Aupilhac is a blend of 2 terroirs, Cocalières and Monpeyroux. This great organic wine is built for laying down, and 10 years of aging will give it all its complexity.

La boda also exists in white from now on: a great gastronomic white, complex and long, without heaviness.

Montpeyroux has a very southern feel, while Cocalières has that freshness and refinement that makes it so charming. A magnificent cuvée in 2020 that will age for 10 years without any problem.
