Le Domaine le Novi, is a family-run operation that disengaged from the cooperative in order to make its own wine in 2012. Domaine le Novi is located in the Luberon region of southern France;
They cultivate some 15 hectares in the commune of La Tour d'Aigues, planted exclusively with 11 southern grape varieties.
Domaine Le Novi seeks to express the fresh character of the Luberon climate, Mediterranean with mountainous tendencies, in their wines made largely from Safres or soft sandstone terroir.
The character of Domaine le Novi wines is one of elegance and balance. Despite their southern character, these wines boast freshness and silky tannins. In any color, they're a great success!

Terre de safre blanc is a supple, luscious white made from predominantly Bourboulenc and Grenache grapes. It's at home as an aperitif, but also with fish à la plancha or white meats.
