Domaine Jean Dauvissat is a family-owned Chablis estate located in Milly, Burgundy. It cultivates approximately 22 hectares of Chardonnay using organic farming methods, incorporating biodynamic practices since 2018, and produces Petit-Chablis, Chablis, and Chablis Premier Cru.
Domaine Jean Dauvissat Père et Fils is a family-run winery in Milly, in the heart of the Chablis appellation. The estate bottles several appellations, ranging from Petit-Chablis to Chablis Premier Cru, offering pure, crisp, and mineral-driven Chardonnays.
The vineyard is managed without herbicides or insecticides, using organic farming methods and, since 2018, biodynamic practices. Here, the Chardonnay expresses the terroir of Chablis: limestone soils, freshness, finesse, and salinity.
The grapes are harvested at optimal ripeness and sorted upon arrival. The wines ferment with native yeasts. Aging lasts one to two years depending on the cuvée, primarily in tanks on fine lees, sometimes with a light touch of oak. This results in Chablis wines that are straightforward, precise, and food-friendly.
A Chablis pairs well with oysters, seafood, fish, goat cheese, and Burgundian cuisine, such as escargots or chicken in cream sauce. Serve it between 10 and 12 °C.
