Domaine Jean Dauvissat, Chablis 1er Cru Côte de Léchet 2023: a dry organic white wine, 100% Chardonnay, from a southeast-facing Premier Cru hillside above Milly. Floral, crisp, and mineral, it pairs well with fish, shellfish, or poultry in a cream sauce.
The Côte de Léchet 2023 is a Chablis Premier Cru from the Domaine Jean Dauvissat, a family-run estate in Milly. This dry white wine from the Chablis appellation, in Burgundy, is a pure Chardonnay grown using organic farming methods.
Fabien Dauvissat runs this family estate, which he revived after a period during which the family had stopped bottling its wines. The vineyards are cultivated organically, following biodynamic principles. The grapes are harvested by hand, and the wines ferment with native yeasts. The Côte de Léchet is a Premier Cru hillside located just above Milly. The steep slope faces southeast and receives plenty of sunshine. The soil consists of Kimmeridgian limestone, rich in small pebbles, which drains quickly and naturally limits yields.
The Côte de Léchet produces floral and elegant wines, with concentration and lemony acidity. The 2023 vintage retains its tension, with a mineral palate that lingers on the finish.
Serve it chilled, but not ice-cold, perhaps after a brief aeration. It pairs well with shellfish, fine fish, cream-based poultry dishes, and hard cheeses such as Comté. For more ideas, read our food and wine pairings with Chablis.
