The IGP d'Oc occupies a central position in the French and international wine landscape. Established in a vast territory covering the whole of the former Languedoc-Roussillon region, from the southern Rhône valley to the foothills of the Pyrenees and the Mediterranean, this protected geographical indication embodies the diversity, freedom of expression and modernity of the vineyards of southern France. The history of the IGP d'Oc is one of a long tradition.

The winegrowing history of the IGP d'Oc is rooted in a multi-millennial heritage. Vines have been cultivated in the south of France since antiquity, introduced by the Greeks and then widely developed by the Romans. Over the centuries, vineyards have grown up around major trade routes, Mediterranean ports and agricultural basins. After a period marked by mass production in the XXᵉ century, the Languedoc vineyards began a profound transformation in the 1980s, oriented towards quality, the diversity of grape varieties and the expression of terroirs. The recognition of the IGP d'Oc accompanies and structures this revival.

The IGP d'Oc vineyards extend over an exceptionally vast and contrasting territory. It encompasses coastal plains, alluvial terraces, limestone hillsides, piedmont areas and high-altitude sectors. This geographical diversity allows for a wide variety of viticultural situations, with very different exposures, soils and climates. Vines can be planted from sea level to over 400 meters in altitude, offering ripening conditions suited to a wide range of grape varieties.

The soils of the IGP d'Oc reflect this territorial diversity. They include limestone, marl, clay, schist, sandstone and rolled pebbles. This geological richness means that grape varieties can be adapted to the most appropriate terroirs, producing wines with varied profiles, ranging from sunny, generous cuvées to fresher, tauter, mineral expressions.

The climate of the IGP d'Oc is predominantly Mediterranean, characterized by strong sunshine, hot, dry summers and mild winters. However, the influence of the sea, relief and winds, notably the tramontane and mistral, provide natural ventilation and beneficial thermal amplitudes. These climatic conditions favor healthy viticulture and go a long way to explaining the rise of organic viticulture in the IGP d'Oc.

The grape variety of the IGP d'Oc is one of its major distinguishing features. Unlike appellations d'origine, IGP d'Oc offers great freedom in the choice of grape varieties. Winemakers can work with both traditional Mediterranean and international grape varieties. For red and rosé wines, Syrah, Grenache, Carignan, Cinsault, Mourvèdre, Merlot, Cabernet Sauvignon and Pinot Noir are widely represented. For white wines, Chardonnay, Sauvignon Blanc, Viognier, Grenache Blanc, Vermentino, Colombard and Muscat take center stage. This diversity allows great creativity and fine adaptation to consumer expectations.

The red wines of the IGP d'Oc present a wide range of styles. Some focus on fruit, suppleness and accessibility, with aromas of fresh red and black fruits. Others, from specific terroirs or controlled yields, offer more structure, depth and complexity, with notes of spice, garrigue and sometimes discreet wood ageing. This stylistic diversity is one of the PGI's major strengths.

The rosés of the IGP d'Oc occupy an important place in production. Made mostly in a dry, modern style, they develop precise aromatic profiles, blending red fruit, citrus and floral notes. Their freshness and balance make them versatile wines, equally suited to the aperitif and the table.

White wines from the IGP d'Oc are enjoying remarkable growth. From terroirs that are often cooler or located at altitude, they offer clean, elegant aromatic expressions, dominated by white-fleshed fruit, citrus and flowers. The palate is characterized by a good balance between roundness and tension, with a fresh, sometimes saline finish. These whites play a key role in the PGI's qualitative move upmarket.

Organic viticulture has become a structuring axis of the IGP d'Oc. A growing proportion of the vineyard is now certified organic or in conversion, making IGP d'Oc one of France's leading organic production areas. The dry, well-ventilated climate naturally limits disease, while the winemakers' commitment to sustainable practices reinforces this dynamic. Working the soil, reducing inputs and preserving biodiversity are at the heart of the approaches taken.

In the cellar, winemaking practices within the IGP d'Oc prioritize precision and legibility. Fermentations are often conducted at low temperatures to preserve aromas, sulfur use is reasoned, and maturation is adapted to the style sought, whether in stainless steel tanks, barrels or alternative containers. The aim is to produce wines that are balanced, expressive and true to their grape variety and terroir.

Food and wine pairings with IGP d'Oc wines illustrate their great versatility. Red wines go well with grilled meats, dishes in sauce, world cuisine and spicy recipes. Whites go well with fish, seafood, cheese and vegetarian dishes. Rosés naturally find their place in convivial, summery contexts.
