Cochon Volant 2025 is Château de Caraguilhes' wine for pleasure and conviviality in the Languedoc AOP — "a full-bodied, crisp, enjoyable wine, easy to share."

Dense color with intense purple highlights, brimming with youthful vigor. Nose of beautiful intensity—raspberry, blackcurrant, cherry. Silky on the palate, crushed raspberry and Burlat cherry, well-structured tannins, freshness, and finesse. Open 1 hour before serving, serve at 15–16°C.

30% Grenache Noir, 30% Carignan, 20% Syrah, 20% Cinsault. Clay-limestone and clay-sandy soils, Saint-Laurent-de-la-Cabrerisse. Certified organic since 1992, biodynamic (Biodyvin and Demeter). Traditional vinification, aged in tanks.

Aging potential: 3 to 5 years.

Cochon Volant is Château de Caraguilhes’s fun and approachable cuvée—the one you bring out without ceremony, among friends, to accompany a joyful gathering. In the AOP Languedoc version, the blend differs slightly from the estate’s Corbières version: equal parts Grenache Noir and Carignan (30% each), complemented by Syrah and Cinsault (20% each)—a mosaic of four southern grape varieties that gives the wine its roundness, freshness, and immediately indulgent character.

Château de Caraguilhes is located in Saint-Laurent-de-la-Cabrerisse, just a few kilometers from the Mediterranean Sea, at altitudes ranging from 1 to 18 meters—one of the vineyards closest to the Corbières coastline. The vineyard is exposed to the Tramontane, a northwesterly wind that naturally cleanses the vines by limiting fungal diseases and the density of insect pests, while maintaining a cool ambient temperature during hot summer days—which helps preserve good acidity levels in the grapes and ensures slower, more complete ripening.

Château de Caraguilhes has been certified Organic since 1987 and has been a member of Biodyvin and Demeter since 2020 — a pioneer of organic farming in the Languedoc under the leadership of Lionel Faivre since 1958. Pierre Gabison, owner since 2005, continues this commitment across 135 hectares of vineyards set within 500 hectares of preserved garrigue. Bettane & Desseauve 2 stars, Jancis Robinson 15/20, Wine Advocate 90/100 for recent vintages of the cuvée.

Le Cochon Volant in Languedoc is made from grapes grown on clay-limestone and clay-sandy soils in Saint-Laurent-de-la-Cabrerisse. Vinification is traditional and straightforward: hand-harvested, grape sorting, traditional fermentation in temperature-controlled stainless steel tanks, and aging in tanks to preserve the natural fruit and freshness—without any time in wood.

The 2025 has a dense, deep color with intense purple highlights at the rim of the glass—a sign of spirited youth and beautiful natural concentration. The nose offers a beautiful intensity of fruit aromas—raspberry and blackcurrant, underscored by harmonious cherry notes. The complexity of the nose lends this young wine a certain maturity. On the palate, the attack is very silky, with notes of crushed raspberry and Burlat cherry that highlight the wine’s full-bodied character. The tannins provide excellent structure, reinforcing the overall balance. A full-bodied, crisp, enjoyable wine, rich in fruit.

Serve between 15 and 16 °C; open 1 hour before serving. Pairings: duck with olives, roast pork with prunes, grilled Toulouse sausage, charcuterie, roast beef, grilled lamb chops, pizza, pasta. Aging potential: 3 to 5 years.
