The village of Vaux-en-Beaujolais, known as Clochemerle thanks to Gabriel Chevallier's famous satirical novel, lies on hills with granitic soils, typical of the region. What's more, only natural treatments based on sulfur and copper are used when necessary to combat vine diseases.

In the cellar, Emmanuel Fellot continues this respectful approach, practicing low-intervention winemaking. Fermentations take place with the indigenous yeasts present on the grapes, without the addition of commercial yeasts, and the use of sulfur is strictly limited.
