The Domaine de Dernacueillette is the most hidden gem and unique destination in the Corbières. Nestled between 360 and 690 meters above sea level in the mountains of the Hautes Corbières, on the Termenès terroir, behind Mont Tauch—the highest mountain in the Corbières at 996 meters— this high-altitude estate produces wines with a freshness and character unmatched in the Languedoc. Guillaume Boussens was named Best Winemaker of the Languedoc for 2024—the ultimate recognition for an artisan who has devoted twenty years to reclaiming a forgotten terroir.

History: A Terroir Reclaimed Through Passion

In November 1999, Guillaume Boussens discovered this abandoned vineyard in the highlands of the Aude. Captivated by the beauty and potential of this exceptional terroir, he took over the estate in 2000. The first two years were spent working with the cooperative winery to prepare the cellars and the winemaking process. The first harvest for his own label took place in September 2003.

Restoring the estate was a monumental undertaking. More than 3,000 metric tons of soil had to be brought back to the plots following the catastrophic floods of 1999. Guillaume planted 14 hectares of vines—Syrah and Grenache—to complement the old Carignan vines, some of which were between 75 and 150 years old. The winery, a 17th-century building in the heart of the village of Dernacueillette, is being gradually renovated. Today, production is limited to 13–18 hl/ha, or about 50,000 bottles per year across four cuvées—a deliberate micro-production that guarantees quality and concentration.

The Termenès terroir: an exceptional, forgotten terroir

The Domaine de Dernacueillette vineyard stretches across the Termenès terroir, one of the most hidden and highest-quality areas in the Corbières. Its most distinctive feature: 9 different soil types coexist across the plots—magnesian schist, ferruginous schist, clay-ferruginous soil, and clay-limestone—an exceptional geological diversity that is directly reflected in the complexity of the wines.

Altitude plays a decisive role. Protected from maritime influences by Mont Tauch, the vineyards benefit from a unique continental climate, which geographers call climatic shade: low precipitation, a wide temperature range between day and night, and well-drained, permeable soils. This exceptional microclimate allows for slow and gradual ripening—the berries, skins, and seeds reach full phenolic ripeness without excess. The harvest begins in October, one to two months after the estates along the Languedoc coast. The result: unparalleled freshness in the Corbières, natural tension, and remarkable drinkability.

Guillaume Boussens’s philosophy: no sulfites, no mechanization, and plenty of patience

Guillaume practices sustainable and natural farming, and has always been pesticide-free. The vineyard is tended without mechanization on the steepest slopes. Winemaking is carried out without any oenological additives—the wines contain no added sulfites, making them particularly easy to drink and expressive. Fermentation takes place in small concrete tanks—providing optimal thermal inertia during those particularly cool mountain nights—varietal by varietal, terroir by terroir. Guillaume’s constant goal: to ensure that the fruit, the minerality of the schist, and the freshness of the high altitude are expressed naturally in every bottle.

Le P’tit Derna 2021 (€16.20) — IGP Pays de Cucugnan. A gateway to the Dernacueillette universe—a sulfite-free blend of Syrah, Carignan, and Grenache that’s rich and fruity, with a soft, pleasant texture. Stone fruits, subtle notes of sour cherries, and mild spices. Soft and fruity on the palate, with a burst of fresh red fruit on the attack; supple with a lovely mouthfeel. Serve slightly chilled in tall glasses with thin rims.

Corbières 2019 (€18.80) — AOP Corbières. A blend of Syrah (55%), Carignan (35%), and Grenache (10%), including vines ranging from 75 to 150 years old. An open and complex nose with notes of black fruit, violet, pepper, and earth. Fresh and taut on the palate, with lovely acidity, fine and fresh tannins, and remarkable length. Distinctive, precise, and of a rarity among Corbières wines. Decanting for an hour reveals its full complexity.

Cuvée Anne-Fleur 2021 (€27.10) — AOP Corbières. The estate’s flagship wine—the only one aged in 50-hl Austrian oak casks for 26 months. A blend of Syrah (60%), Carignan (30%), and Grenache (10%). Delicate, fruity, precise, and fresh on the nose. Powerful on the palate with supple, well-integrated tannins and superb length. The estate’s wine for fine dining and aging—reaches its peak in 10 years.

Les Hauts de Dernacueillette 2019 (€29.00) — AOP Corbières. The estate’s prestigious single-vineyard cuvée. A blend of Syrah, Grenache, and Carignan, with a nose of great minerality and notes of citrus and blood orange. On the palate: round, full-bodied, and fruity, with blood orange on the attack, ripe red fruits on the finish, and soft tannins. Serve at 13–16°C in large glasses.
