Les Hauts de Dernacueillette is the prestigious single-vineyard cuvée from Domaine de Dernacueillette. Sourced from the vineyard’s highest-altitude plots—up to 690 meters—on the most mineral-rich schist soils of the Termenès terroir, this cuvée is the most accomplished expression of Guillaume Boussens’s genius and the exceptional potential of this forgotten terroir in the Hautes Corbières.
A blend of organic Syrah, Grenache, and Carignan, sourced from the estate’s highest-altitude plots in the Termenès terroir. The magnesian and ferruginous schist soils—of remarkable purity and minerality at this altitude—give the wine a unique aromatic signature: notes of citrus and blood orange—rare in the Corbières—and an almost mountainous freshness. Yields are deliberately limited to 13–18 hl/ha. The vineyards are not mechanized. Vinification without added sulfites, without additives, in small concrete tanks. Hand-harvested in October.
Color: opaque red with violet highlights.
Nose: highly mineral on schist. Notes of citrus and blood orange, beautifully fresh, complex, and charming.
Palate: remarkable roundness and fullness. Blood orange on the attack, ripe red fruits on the finish, soft and silky tannins. Long, fresh, and lingering finish. The schist’s minerality shines through to the very end.
Serving: at 13–16°C, in large glasses with a thin rim to open up the aromatic layers. Decant for 30 minutes.
Premium red meats, Pyrenean lamb, rib of beef, duck breast with figs, game birds, and schist-aged cheeses from the Corbières. The wine’s freshness and minerality make it a versatile pairing for high-end Mediterranean cuisine.
