The Corbières vintage is the signature wine of the Domaine de Dernacueillette. It is the wine that most directly expresses the terroir of Termenès and the genius of Guillaume Boussens—voted Best Winemaker of Languedoc 2024. An organic Corbières unlike any other: no southern heat, no heaviness, no overripeness. Just the freshness, tension, and complexity of an exceptional high-altitude vineyard.
Syrah 55%, Carignan 35%, Grenache 10%. The Carignan comes from old vines ranging from 75 to 150 years old — true patriarchs that sink their roots into the nine soil types of the Termenès terroir and naturally concentrate their grapes at yields of 13 to 18 hl/ha. Non-mechanized vineyard work on the steep slopes. Vinification without added sulfites, variety by variety in small concrete tanks. Hand-harvested in October—one to two months after the Languedoc coast.
Color: deep red.
Nose: open, blackberry, blackcurrant, violet, pepper, earthy and mineral notes evocative of schist.
Palate: beautiful natural acidity, fresh and taut. Fine, fresh tannins. Remarkable, complex, and long finish. Decanting for 1 hour reveals its full depth.
Serving: at 14–16°C, in large glasses. Decant for 30 minutes to 1 hour.
Grilled or roasted red meats, herb-roasted lamb, duck breast, cheeses from the Corbières and the Pyrenees, Mediterranean stews. This organic Corbières also stands out for its remarkable pairing with dishes that require freshness—it doesn’t overpower them.
