Organic wines from the South-West have grown up in the shadow of Bordeaux, which for many decades did everything it could to block their rise, not least thanks to the control of the rivers exercised by the great metropolis of Aquitaine.
With this era behind us, and wines having made immense progress elsewhere, we are witnessing a revival of Southwestern wines. Less hard, less tannic, more accessible in their youth, Southwestern wines have become seductive.

Under the term vins bio du Sud-Ouest, we distinguish wines from Bergerac, Cahors of course, but also those from Côtes de Gascogne, Côtes du Marmandais, Madiran, Jurançon or even Irouléguy.
This great diversity hides a homogeneity of character in the red wines of the South-West: powerful and structured, these are wines made to rival regional dishes: duck breast, cassoulet, and other confits. The revolution of the last ten years has been for winemakers to make these great red vins de garde more approachable and accessible. A great deal of work has gone into making the tannic structures more supple, which has convinced even the most skeptical wine lovers. Domaine Labranche-Laffond in Madiran and Mas del Périé in Cahors, for example, produce round, fine wines, even when young.
Whites, whether off-dry or sweet, are made from Petit and Gros Manseng grapes, which are highly aromatic and have good natural acidity: they are ideal for enhancing foie gras thanks to their fine balance. Change your Sauternes for a demi-sec de Gascogne on your foie gras: its flavors will be even better enhanced!
