The Domaine Jean-Marc Boillot came into being in the 1980s when Jean-Marc Boillot, after working for several renowned Burgundy estates, decided to devote himself to his own project. Grandson of Étienne Sauzet, an emblematic name in Puligny-Montrachet, Jean-Marc Boillot has inherited an exceptional winegrowing heritage and exceptional know-how. With a rigorous approach and attention to detail, he has set out to produce refined wines that express the essence of each parcel.

Today, the domaine covers some ten hectares, spread over several prestigious Côte de Beaune appellations, including Puligny-Montrachet, Pommard, Volnay and Montagny. The estate's plots are planted on a variety of limestone and clay soils, terrains that provide the ideal conditions for Burgundian grape varieties, mainly Chardonnay and Pinot Noir, to flourish.

Under the management of Jean-Marc, then his daughter Lydie and son-in-law François, the estate has succeeded in combining tradition and modernity. Today, Domaine Jean-Marc Boillot is recognized for its complex, mineral white wines, as well as for its elegant, structured reds, which perfectly illustrate the richness and diversity of Burgundy terroirs.

At Domaine Jean-Marc Boillot, viticulture is practiced with respect for terroir and nature. Jean-Marc Boillot and his team adopt integrated viticulture practices, favoring gentle, natural methods to maintain the ecological balance in their vineyards. The estate has been converting to organic farming since 2023. Interventions in the vineyards are limited, and the use of chemicals is restricted to the strict minimum. The estate favors practices such as manual tillage of the soil, natural grass cover and treatments based on organic products to limit the use of synthetic products. These practices help preserve biodiversity and soil structure, which are essential for the production of high-quality grapes.

Cellars.

In the cellar, Domaine Jean-Marc Boillot focuses on respectful winemaking, with no unnecessary interventions, to preserve the purity and authenticity of the grapes. Fermentations are carried out naturally, using indigenous yeasts, and oak ageing is controlled to avoid masking the fruit's aromas. Thanks to this meticulous approach, each Domaine cuvée reflects the authentic expression of its terroir, offering precise, elegant wines of great complexity.

The Puligny-Montrachet is undoubtedly one of the estate's most renowned cuvées. This white wine, made from Chardonnay plots on limestone soils, expresses all the minerality and aromatic complexity of the great wines of Puligny-Montrachet. On tasting, Domaine Jean-Marc Boillot's Puligny-Montrachet reveals aromas of white flowers, white-fleshed fruit and honey, with good acidity and a long, mineral finish. This wine is the perfect accompaniment to seafood, grilled fish or mature cheeses. The Puligny-Montrachet 1er cru Referts is one of the appellation's finest crus.

The Pommard 1er cru les Jarollières from Domaine Jean-Marc Boillot is a structured, powerful red wine made from Pinot Noir. On the palate, it offers aromas of red and black fruits, such as cherry and blackberry, with spicy notes and firm tannins that give it excellent ageing potential. This Pommard is ideal for accompanying red meats, game or dishes in sauce.

The Montagny 1er cru is a white wine from the Côte Chalonnaise, made from parcels of Chardonnay. This wine is lively and mineral, with aromas of white flowers, apple and a hint of almond. On the palate, it's fresh and lively, with good acidity. This Montagny is perfect with aperitifs, seafood or grilled fish. The Macon-Village is an excellent Chardonnay, offering superb value for money.
