The Domaine Jean-Marc Boillot came into being in the 1980s when Jean-Marc Boillot, after working for several renowned Burgundy estates, decided to devote himself to his own project. Grandson of Étienne Sauzet, an emblematic name in Puligny-Montrachet, Jean-Marc Boillot has inherited an exceptional winegrowing heritage and exceptional know-how. Today, the domaine covers some ten hectares, spread over several prestigious Côte de Beaune appellations, including Puligny-Montrachet, Pommard, Volnay and Montagny. The estate's plots are planted on a variety of limestone and clay soils, terrains that provide the ideal conditions for Burgundian grape varieties, mainly Chardonnay and Pinot Noir, to flourish.

The estate has been converting to organic farming since 2023. Interventions in the vineyards are limited, and the use of chemicals is restricted to the strict minimum. The estate favors practices such as manual tillage of the soil, natural grass cover and treatments based on organic products to limit the use of synthetic products. The palate has a spicy, saline dynamic. This is a bewitching Puligny, rich, concentrated, with a chiseled texture. Floral and ripe fruit on the nose, pure orchard fruit on the palate, supported by a subtle vanilla woodiness. Clean freshness on the finish, and good persistence.
