AOP Gaillac in a nutshell.
Located in southwestern France, the AOP Gaillac is one of France's oldest wine-producing regions. Its history dates back over 2,000 years, when the Romans introduced vine cultivation to the Tarn valley. In the Middle Ages, Benedictine monks made a major contribution to the reputation of these wines, taking advantage of their proximity to the river to export their produce. Today, the Gaillac PDO continues to perpetuate this winemaking tradition, while incorporating modern techniques to produce top-quality wines. The appellation covers some 3,500 hectares and extends over a mosaic of terroirs that give the wines a great diversity of character. Thanks to a temperate oceanic climate with Mediterranean influences, winemakers benefit from ideal conditions for producing a varied range of wines, whether red, white, rosé or sparkling.
The Gaillac PDO is distinguished by the use of autochthonous grape varieties, some rare and emblematic of the South-West, which bring unrivalled typicity to the appellation's wines.
Among the red grape varieties are:
Duras: This indigenous grape produces wines with spicy, peppery notes and a fine tannic structure.
Braucol (or Fer Servadou): Offers aromas of ripe red fruit, blackcurrant and sometimes hints of tobacco and licorice.
Prunelart: An ancient grape variety recently rediscovered, it brings power and complexity to red wines.
Syrah, Merlot and Cabernet Sauvignon: Although not autochthonous, these grape varieties harmoniously complement the vineyard, bringing roundness and suppleness to blends.
The white grape varieties are just as distinctive:
Loin de l'Œil: An emblematic variety of the Gaillac PDO, it produces expressive white wines with aromas of white-fleshed fruit and citrus.
Mauzac: Used for dry whites as well as sparkling and sweet wines, it contributes notes of green apple and honey.
Ondenc: A rare grape variety, it produces elegant, aromatic wines with good acidity.
Sauvignon Blanc and Muscadelle: These varieties complete the offering, adding freshness and complexity to blends.

Gaillac red wines come in several profiles:
Light, fruity reds: Made mainly from Braucol and Duras, they offer red fruit aromas and a supple mouthfeel.
Fleshy, spicy reds: Cuvées aged in oak barrels gain in structure and complexity, ideal for accompanying grilled meats and dishes in sauce.
Dry whites: Fresh and mineral, they seduce with their liveliness and notes of citrus and white flowers.
Blancs doux: Obtained from late harvests, they develop aromas of honey, apricot and exotic fruit, perfect for accompanying foie gras or a fruity dessert.
Effervescents: A Historic Speciality
Gaillac Méthode Ancestrale is a local pride. Made exclusively from Mauzac grapes, it offers fine effervescence and aromas of green apple and pear. Ideal as an aperitif or to accompany a light dessert.
For several years now, the Gaillac PDO has been part of an eco-responsible dynamic, with a rise in organic and biodynamic wines. Thanks to a favorable climate, marked by regular winds that limit vine diseases, winegrowers can cultivate their plots with a minimum of chemical interventions. Today, around 30% of the appellation's vineyards are certified organic or in conversion. This transition is driven by estates concerned with preserving biodiversity and producing wines that are more respectful of the environment and the consumer.
Some winemakers are going even further by adopting the principles of biodynamics, a holistic approach that follows lunar cycles and promotes harmony between the vine and its environment.
