The domaine Hubert Lignier is a winery located in Morey-Saint-Denis, Burgundy. It is run by Laurent Lignier, who took over the family business in 2006. The domaine cultivates 12 hectares of vines, spread over 20 parcels. The vines are planted with 100% pinot noir.
Recognized for its wines of great finesse and respect for tradition, this house produces organic wines from vines planted on prestigious terroirs, notably in Gevrey-Chambertin, Morey-Saint-Denis and Chambolle-Musigny. For several generations, the Lignier family has cultivated and vinified its vines with passion, paying meticulous attention to the work of the soil and the expression of each parcel. Today run by Hubert's son Romain Lignier, the estate is in transition to organic viticulture, reinforcing its commitment to production that respects the environment and wine quality.
The Domaine Hubert Lignier is certified organic, a choice dictated by the desire to respect Burgundy terroirs as much as possible and to produce authentic, chemical-free wines. By adopting organic viticulture practices, the estate aims to preserve the biodiversity of its vineyards while producing wines that more faithfully express the character of each parcel.
Vineyard work is carried out manually, with particular attention paid to respecting the soil. Treatments are limited to natural products such as sulfur and copper, while methods such as grassing and tilling the soil by hand enhance the vitality of the vines. Reducing the use of chemicals preserves the natural balance of the vineyard and produces healthy grapes, without altering the taste of the terroir.
.This conversion to organic and biodynamic viticulture is accompanied by careful vinification, where fermentations take place naturally, without the addition of commercial yeasts, and with limited use of sulfur. The wines are aged in oak barrels, often with a low percentage of new wood, so as not to mask the delicate aromas of Pinot Noir.
