The Domaine Boris Champy enjoys an exceptional location, nestled in the heights of the Côte de Beaune. The altitude and exposure of the plots allow the grapes to ripen slowly, preserving a natural acidity that gives the wines incomparable freshness and elegance. The soils are mainly composed of limestone and marl, bringing minerality and complexity to the wines. Each parcel is meticulously worked to preserve the specific identity of each climate and enable a unique expression of Pinot Noir and Chardonnay. The domaine boasts an 18-hectare vineyard, spread over the following appellations: Pommard, Beaune premier cru "Aux Coucherias", Hautes côtes de Beaune, Coteaux Bourguignon, Bourgogne chardonnay, Bourgogne aligoté.
Le Pommard en Boeuf opens with intense aromas of black cherry, undergrowth and leather. On the palate, the tannic structure is present but elegant, with fine tension supporting a long, mineral finish. Ideal to accompany red meats, duck breast or dishes in sauce.
The Haute-côte-de-Beaune Bignon stands out for its balance between intensity and finesse. The nose reveals notes of fresh red fruit, violets and a touch of spice. On the palate, the attack is silky, with delicate tannins and a mineral framework that brings freshness and length.
Montagne 382 blanc Sourced from the estate's highest altitude parcels, this cuvée is a model of freshness and elegance. The nose reveals subtle aromas of fruit, wild flowers and a hint of menthol. On the palate, the liveliness is remarkable, offering an airy, chiseled wine with beautiful aromatic complexity.
The Beaune 1er cru aux Coucherias is remarkable. Its nose is marked by notes of blackberry, blackcurrant and truffle. The palate is full and deep, with an imposing tannic structure that gives it remarkable ageing potential.
