Here, nothing has been invented to seduce: everything stems from an intimate conviction that great wines are born of the right work, constant attention to living things and unfailing fidelity to the personality of the soils nuitons.
Eight generations have succeeded one another at the head of the estate, each leaving a decisive but never revolutionary mark, in a continuity that commands respect. Today, Pascale and Georges Chicotot, enlightened guardians of this heritage, work hand in hand with their daughter Cécile, who has returned to the estate after studies and experiences that have led her to understand even better the singularity of its heritage. Together, they shape a vineyard of around 10 hectares essentially devoted to pinot noir, the variety that finds its greatest capacity for expression on these hillsides.
The estate extends over several emblematic climats of Nuits-Saint-Georges, from the village to the premier crus located on the heights. The soils, composed of deep clays, brown limestones, marl veins and cailloutis, make up a complex geological landscape that the Chicotot family has always learned to read and interpret with almost instinctive precision.
The estate's vineyards are located in the heart of the Nuits-Saint-Georges region.
Long before certification was sought and displayed, Domaine Chicot was already working the vines with parsimonious care, refusing any excess of inputs, limiting synthetic products, favoring light plowing and plant observation. The conversion to organic farming therefore didn't provoke a rupture - it merely endorsed a practice that was already anchored, refined, tried and tested.
Soils are tended with manual care: clawing, controlled weeding, respect for natural cycles. Yields are deliberately low, not to create powerful wines, but to obtain concentrated grapes capable of expressing the depth of the terroir without mutilating the balance of the fruit.
The work schedule follows natural rhythms, not out of dogmatism, but because generations have found that a vine that is listened to responds better than one that is forced.
The harvest, of course, is entirely manual, carried out by an experienced team who sort the grapes directly at the plot so that only the healthiest berries enter the vat.
In the coolness of the estate's ancient cellars, vinification follows a simple yet demanding guideline: let terroirs express themselves without ever rushing them.

In Chicotot we find this ability to bring together the telluric force of terroir and the natural delicacy of pinot noir with an almost disarming sincerity.
The estate's Papillon de Nuys cuvée is a synthesis of the house style. The nose expresses a broad palette of fresh black fruits - blackberry, blueberry, blackcurrant - complemented by accents of violet, white pepper and damp earth. On the palate, the balance is superb: a straightforward attack, ample but perfectly linear body, and a taut finish that signals the minerality of Nuits-Saint-Georges.
This is a serious, vibrant wine that evolves very well over 10-15 years and is outstanding with a rack of veal, roast partridge or a simple dish of sautéed mushrooms.
Located on an area with deeper, more alluvial soil, the "Aux Allots" parcel produces a luminous, almost airy wine. The nose opens with fresh raspberry, redcurrant, red cherry, with fine notes of peony and sweet spices. The palate is remarkably supple and fluid, with very fine tannins and irresistible greediness.
This is the estate's most charming Nuits-Saint-Georges, ideal in its early years, perfect with roast poultry or farmhouse pork chop.
"Aux Saint Juliens" always stands out for its enveloping character and natural velvety smoothness. The nose is ample, marked by black plum, morello cherry, licorice and a mentholated touch that brings freshness.
The palate develops a rich, satiny body, with silky but present tannins, and a warm length.
It is a wonderful accompaniment to stewed dishes - boeuf bourguignon, game effiloché, daube provençale - or a fine piece of matured beef.
An elevated, wind-exposed parcel, "Aux Thorey" offers a premier cru that's more slender than powerful. The nose is delicate, with tangy red fruit, rose, bramble and warm stone. The palate is taut, precise, with millimetric tannins and a vibrant, mineral finish.
This is a wine of remarkable purity, in an almost Vosnian style, ideal with roast guinea fowl, beef carpaccio or delicate, perfumed cuisine.
"Rue de Chaux" is the estate's most emblematic premier cru cuvée. Here, the terroir makes its mark: an intense nose of ripe Morello cherry, wild blackberry, black pepper, fine smoky notes.
The palate is structured, energetic, almost architectural, with impressive depth.
The wine gains extraordinary brilliance after 8 to 12 years of cellaring, developing aromas of truffle, cocoa, underbrush and game background.
At table, it calls for noble dishes: leg of lamb, venison stew, sweetbreads.
Perched high on the hillside, "Les Vallerots" gives the most vertical, mineral expression of the estate's wines. The nose is subtle: fresh morello cherry, bramble, peony, graphite.
The palate is long-lined, nervous, almost crystalline, with remarkably fine tannins and a saline finish.
This is a wine of great tension, for long cellaring, perfect with noble poultry, wild mushroom risotto or delicately flavored dishes.
