Nested in the charming village of Celles-sur-Ource, in the heart of the Côte des Bar, the domaine benefits from an exceptional terroir, characterized by clay-limestone and Kimmeridgian soils similar to those of Chablis. The Côte des Bar, located in the extreme south of Champagne, is a region distinguished by the quality of its Pinot Noirs. This is where the Gerbais family has established its vineyards, covering some 18 hectares, spread over several carefully selected plots. The turning point for the estate came when Pascal Gerbais adopted a more environmentally-friendly approach. This philosophy has been continued by Aurélien Gerbais, representing the latest generation, who has intensified efforts to convert the vineyard to organic viticulture and to enhance biodiversity.

The estate uses natural methods to cultivate its vines, without synthetic herbicides or pesticides. Soils are worked manually or mechanically to promote their vitality, and plant cover is used to maintain biological balance and combat erosion. Treatments against vine diseases, such as mildew, are carried out using copper-based solutions, sulfur and biodynamic preparations.
.In the cellar, fermentations take place naturally, with indigenous yeasts, and the use of sulfur is strictly limited to preserve the purity and authenticity of the wines. These practices guarantee champagnes that faithfully reflect their terroir, while respecting the principles of sustainable production.

The Domaine Pierre Gerbais offers a range of champagnes that highlight the three traditional grape varieties of Champagne: Pinot Noir, Chardonnay and also, more rarely, Pinot Blanc. Each cuvée is a unique expression of the Côte des Bar terroir, with particular attention paid to vinification and ageing.
This cuvée, made from a blend of three grape varieties (Pinot Noir, Chardonnay and Pinot Blanc), is a true ode to the terroir of Celles-sur-Ource. Grains de Celles is a balanced, precise champagne, with aromas of yellow fruit, brioche and minerals. On the palate, it is lively, sustained by a fine, persistent effervescence. A perfect accompaniment to poultry or grilled vegetable dishes. There's also Grains de Celles rosé!!
La Loge cuvée is a celebration of the rare Pinot Blanc grape variety, a treasure of the estate. Made from old vines planted in 1904, La Loge showcases the finesse and elegance of Pinot Blanc on Kimmeridgian soils. On the palate, this organic champagne reveals subtle aromas of white flowers, pear and hazelnut, with lovely tension and persistent minerality. Its balance makes it a perfect cuvée for gastronomic pairings, especially with seafood, shellfish or grilled fish.
Champ Viole is a cuvée made exclusively from Pinot Noir, grown on parcels carefully selected for their ideal exposure and clay-limestone soils. This organic champagne is distinguished by its aromatic power and depth. On tasting, it reveals notes of red fruit, black cherry and spices, with a balanced structure and fine effervescence. This champagne goes perfectly with white meat dishes, poultry in sauce or soft cheeses.
The Grandes Côtes cuvée is a tribute to the estate's most prestigious terroirs. The result of a meticulous blend of Pinot Noir and Chardonnay, it offers remarkable complexity. This champagne is characterized by aromas of ripe fruit, brioche and honey, accompanied by a creamy texture and refreshing acidity. On the palate, it seduces with its length and precision, making it an ideal choice for special occasions or to accompany refined dishes such as foie gras, truffle-based dishes or elegant desserts.

Returning in 2011, Aurélien Gerbais continues the work of his forebears, with ageing methods that favor stainless steel and low dosage to contain the beautiful ripeness of the champagnes in the area. Emphasizing the parcellaires from the perpetual reserves initiated in 2011, the range has been revamped to magnify the complex expression of pinots noir and meunier, chardonnay and very old pinot blanc vines on the commune's Kimmeridgian marls. Here, champagnes are fleshy yet precise, never soft, and the bubbles are extremely delicate. Year after year, the domaine confirms that it is one of the benchmarks in the sector, and has even passed a new milestone!"
