AOC Gaillac Premières Côtes

The AOP Gaillac Premières Côtes is a special distinction within the Gaillac PDO, highlighting vineyards located on the appellation's best exposed slopes. Recognized for the exceptional quality of its wines, this denomination emphasizes privileged terroirs and careful vinification, offering more concentrated and complex wines.

The main difference between AOP Gaillac and AOP Gaillac Premières Côtes lies in geographical location and soil quality.

Terroir and exposure: Premières Côtes correspond to the best exposed slopes, benefiting from natural drainage and optimal sunshine, which favors better grape ripening.

Concentration and complexity:

Thanks to lower yields and meticulous grape sorting, wines from this appellation offer a more assertive structure and great aromatic richness.

Vinification and ageing: Gaillac Premières Côtes cuvées are often vinified with greater care, with some benefiting from oak barrel ageing that adds roundness and complexity.

As with the Gaillac PDO, Gaillac Premières Côtes PDO wines feature grape varieties typical of the Southwest, but benefit from optimal conditions to express their full typicity.

Duras: Brings a fine structure and more pronounced spicy notes.

Braucol (Fer Servadou): Develops intense black fruit aromas and silkier tannins.

Prunelart: Accentuates the aromatic complexity and depth of wines.

Syrah, Merlot and Cabernet Sauvignon: Complement blends by adding roundness and finesse.

Loin de l'Œil: Expresses all its finesse, with citrus notes and beautiful length.

Mauzac: Accentuates the liveliness and freshness of dry and sparkling whites.

Ondenc: Produces refined wines, marked by a beautiful natural acidity.

Sauvignon Blanc and Muscadelle: Bring complexity and elegance to blends.

The red wines of Gaillac Premières Côtes are more concentrated and offer an assertive tannic structure, ideal for ageing. They are the perfect accompaniment to gourmet dishes such as game, meats in sauce and mature cheeses.

The dry whites are more concentrated and offer an assertive tannic structure, ideal for cellaring.

Dry whites are more expressive, with fine minerality and marked aromatic tension. As for the mellow whites, they develop notes of candied fruit and honey, perfect for accompanying foie gras or a refined dessert.

The Gaillac Méthode Gaillac is the perfect accompaniment to a fine wine.

The Gaillac Méthode Ancestrale Premières Côtes is distinguished by finer bubbles and a more subtle aromatic expression, bringing a festive, refined touch.
