A white Haute-Cotes-de-Beaune from lovely Altitude parcels. A fresh, elegant Chardonnay, a model of its kind, worked biodynamically.

At altitude, in the hills and valleys of the Hautes-Côtes, Domaine Boris Champy practices viticulture that's a little out of step with that of the great wine-growing côte. The plots are islands of biodiversity, with multiple enclosures, trees, hedges, walls, meurgers and fruit trees. Boris knows that a holistic approach is needed, that of a global ecosystem in agroecology, intimately respectful of the environment.
