At altitude, in the hills and valleys of the Hautes-Côtes, Domaine Boris Champy practices viticulture that's a little out of step with that of the great wine-growing côte. The plots are islands of biodiversity, with multiple enclosures, trees, hedges, walls, meurgers and fruit trees. Boris knows that a holistic approach is needed, that of a global ecosystem in agroecology, intimately respectful of the environment.

Métamorphisme du domaine de la Bergerie is a cuvée made from 100% pineau d'aunis. This organic wine is supple and gourmand, developing on notes of red fruit and pepper. Very drinkable!

The cuvée Huit Clos du domaine Bonnigal-Bodet is a great Loire chenin from the Touraine-Amboise PDO. This cuvée develops fresh, fruity aromas of pear and apple, accompanied by subtle floral notes and a beautiful minerality. Finishes on notes of citrus and honey and slightly saline. Magnificent.

The Pommard En Boeuf du domaine Champy has a frank nose of raspberry and blackcurrant. On the palate, the tannins are very fine, far from the tannic power of some wines of the vintage. It's essential to decant this wine while it's still young for it to reveal all its complexity.

This Beaune 1er cru les Coucherias from the domaine Boris Champy is a superb Burgundy. In this fine 2020 vintage, the wine develops cherry and licorice notes on the nose supported by a light woody touch. The palate is greedy and silky: it reveals a generous body on red and black fruit aromas. Fresh finish.
