Domaine Jean Dauvissat, Chablis Les Tierces 2023: an organic dry white wine, 100% Chardonnay, grown on east-facing limestone marl soils near Milly. Citrus, white fruits, a taut texture, and a briny finish. Pair with oysters, fish, or seafood.
Les Tierces 2023 is a Chablis from Domaine Jean Dauvissat, a family-run estate in Milly. This dry white wine from the Chablis appellation, in Burgundy, is a pure Chardonnay grown using organic farming methods.
Fabien Dauvissat now runs this family estate, which he revived after a period during which the family had stopped bottling its wines. He initiated the transition to organic farming and works according to biodynamic principles. The grapes are harvested by hand, and the wines ferment with native yeasts. They are aged primarily in stainless steel tanks on the lees, which preserves their tension. Les Tierces comes from an east-facing slope on shallow limestone marl.
The nose opens with citrus zest, white stone fruits, and hints of flowers. The palate is taut and mineral, with a finely chalky texture. The finish is long, clean, and briny.
Serve Les Tierces 2023 well-chilled, but not ice-cold. It pairs well with oysters, seafood, fish, and shellfish, as well as goat cheese and cream-based poultry dishes. For more ideas, read our food and wine pairings with a Chablis.
