About

Domaine Jean Dauvissat, Chablis 1er Cru Vaillons 2023: a lively, mineral, and briny organic Chardonnay

The Vaillons 2023 is a Chablis Premier Cru from the Domaine Jean Dauvissat, a family-run estate in Milly. This dry white wine from the Chablis appellation, in Burgundy, is a pure Chardonnay grown using organic farming methods.

The Wine

Fabien Dauvissat runs this family estate, which he revived after a period during which the family had stopped bottling its wines. The vineyards are managed using organic farming methods, incorporating biodynamic principles. The grapes are harvested by hand, and the wines ferment with native yeasts. Vaillons is one of the great Premier Crus on the left bank of the Serein River, on Kimmeridgian-type limestone soils that blend limestone and clay. It generally produces fresh, open Chablis wines that are recognizable even in their youth.

Tasting Notes

The Vaillons 2023 is a lively white wine with pronounced acidity, featuring notes of shellfish, salt, and crushed stone. The finish is taut and mineral. It can be enjoyed now, but it will benefit from aging for a few years.

Serving and Food Pairings

Serve it chilled, but not ice-cold. It pairs well with oysters, shellfish, white fish, cream-based poultry dishes, and hard cheeses. For more ideas, read our food and wine pairings with Chablis.
