Sylvain believes that the work done in the vineyards (ploughing, green harvesting, working organically...) has more influence than the vinification on the final result, and we can only agree when we taste his wines: beautiful respect for the fruit, beautiful enhancement by the wood and great complexity. Le Roucas, a red cuvée from the domaine Hauvette, features 60% Grenache. More accessible in youth than the estate's other red cuvées, Roucas develops on notes of thyme, mint and cherries. The finish is always fresh and elegant. Light decanting and serving at 15-16° is recommended. A great bottle from Baux de Provence.
