Guide RVF 2026: 95/100 The Domaine D'Aupilhac is now a sure bet in Languedoc Roussillon as Sylvain Fadat produces some of the Languedoc's greatest wines. Sylvain believes that the work done in the vineyards (ploughing, green harvesting, working organically...) has more influence than the vinification on the final result, and we can only agree when we taste his wines: beautiful respect for the fruit, beautiful enhancement by the wood and great complexity. A white Burgundy from Domaine Fellot offering excellent value for money. The nose develops notes of white flowers; the palate is balanced, round and buttery. A great success!
CloseLe Roucas, a red cuvée from the domaine Hauvette, features 60% Grenache. More accessible in youth than the estate's other red cuvées, Roucas develops on notes of thyme, mint and cherries. The finish is always fresh and elegant. Light decanting and serving at 15-16° is recommended. A great bottle from Baux de Provence.
