The Vieilles Vignes cuvée from Domaine Gauby is magnificently racy. The nose is complex, with notes of black fruits and spices. On the palate, the wine is full-bodied, with the same aromas as on the nose and great length. A wine still a long way from its peak. Domaine Gauby, located twenty kilometers northwest of Perpignan, covers some 85 hectares, including 45 hectares of vines aged up to 12 years. The estate uses biodynamic methods and produces some of the most ambitious wines in Roussillon. Domaine Gauby is rated 3 stars in the guide des meilleurs vins de France 2023.

The cuvée Essencial rouge du domaine des Schistes is from a terroir of schist marl slopes and clay-limestone plateau in the commune of Tautavel. The wine is quite expressive with notes of black fruit and zan. The palate is smooth, well-balanced and quite complex: spices (pepper) mingle with black fruits (blackberry). Good length. Good value for money.

This blanc cuvée Essencial from domaine des Schistes has all the gourmandise we've come to expect from southern wines, without ever lapsing into loudeness. This cuvée essencial, a blend of vermentino, grenache and maccabeu, is rich and very fruity. A lovely organic aperitif wine, it will also be at home with summer dishes (antipasti, salads...)
