To be enjoyed over 10 years!Thomas Pico, a young man in his thirties, has been quick to make a name for himself in Chablis. "Thomas Pico, who lives in Courgis, has been working his vines since 2004, immediately converting them to organic farming. The estate has gradually expanded, and Thomas is now also in charge of the family estate (Domaine de Bois d'Yver), from which his vines originate. (...) Vinification with indigenous yeasts, construction of a new cellar in 2014: the wines have progressed rapidly. The latest vintages shine with singular brilliance, with extended maturation times."
