About

Richard Rottiers Dernier Souffle 2023, organic Moulin-à-Vent made from old-vine Gamay

The Domaine Richard Rottiers is located in Romanèche-Thorins, in the heart of the Moulin-à-Vent appellation, in the Beaujolais region. Richard Rottiers, originally from Chablis, established his estate there in 2007 and cultivates his vines using organic farming methods. Dernier Souffle 2023 is named after a vineyard parcel near the Romanèche-Thorins cemetery.

The Wine

Dernier Souffle is a 100% Gamay made from old vines. The grapes are hand-harvested and vinified as whole clusters using a traditional semi-carbonic maceration method. The wine is then aged in barrels, which refines it without masking the fruit.

Tasting Notes

The wine displays notes of black fruit, with freshness, energy, and tension. The structure is firm, and the finish is clean and precise. It can be enjoyed now to appreciate its fruitiness, or cellared for a few years.

Serving and Food Pairings

Serve it slightly chilled, but not too cold. It pairs well with charcuterie, roasted poultry, rabbit in sauce, and grilled white meats.
