A wine of great precision and endless length!"The Domaine Tissot has exceptional terroirs, such as Les Bruyères, La Mailloche, En Barberon, Curon. The estate's aim is to maximize the expression of its terroirs: the 35 ha of vines are now cultivated using Biodynamic methods (Demeter certification) to let the soils live, to ensure that the grapes are free of chemicals, to enable fermentation using natural yeasts, and to reduce the amount of sulfur used in the cellar. Domaine Tissot's "Les Bruyères" is a small parcel of 80 ares whose vines are around 45 years old on a Triassic clay terroir. Here again, Stéphane Tissot proves the full extent of his talent, ageing this yellow wine for 6 years in whisky barrels, which is fabulous for its balance, depth and personality. A complex, fruity wine.
