Magnificent oxidative savagnin from the Tissot estate. A benchmark in its field, mineral, slender, on notes of fresh walnut, sea salt. The Domaine Tissot boasts exceptional terroirs, such as Les Bruyères, La Mailloche, En Barberon, Curon. The domaine's aim is to maximize the expression of its terroirs: the 35 ha of vines are now cultivated using Biodynamic methods (Demeter certification) to let the soil live, to ensure that the grapes are free of chemicals, to enable fermentation using natural yeasts, and to reduce the amount of sulfur used in the cellar. This organic Corbières wine is made from a rigorous selection of grapes from 5 plots with heavy, clay-limestone soils on the edge of the detangs between Peyriac-de-Mer and Bages. The wine is partially aged in barrels. This is a cuvée for laying down, made to last for years. Forget about 10 years in the cellar.
