The estate's aim is to maximize the expression of its terroirs: the 35 ha of vines are now cultivated using Biodynamic methods (Demeter certification) to let the soils live, to ensure that the grapes are free of chemicals, to enable fermentation using natural yeasts, and to reduce the amount of sulfur used in the cellar. The wines have a rare personality and sparkle. Guide des meilleurs vins de France 2019, domaine 3 étoiles: "What a journey Stéphane Tissot has made since 1990!
