Here again, Stéphane Tissot shows us the full extent of his talent by ageing this yellow wine, fabulous for its balance, depth and personality, for 6 years in whisky barrels. A complex, fruity wine. The Domaine Tissot boasts exceptional terroirs, such as Les Bruyères, La Mailloche, En Barberon, Curon. The domaine's aim is to maximize the expression of its terroirs: the 35 ha of vines are now cultivated using Biodynamic methods (Demeter certification) to let the soil live, to ensure that the grapes are free of chemicals, to enable fermentation using natural yeasts, and to reduce the amount of sulfur used in the cellar. A superb Crémant du Jura porduced by the domaine Tissot. An airy Crémant with notes of white fruit. The nose develops pretty floral aromas of lime blossom and jasmine, followed by brioche notes. Refreshing and fruity, the palate offers lovely minerality with fine, stimulating bubbles. The finish is salivating and juicy.
