Domaine Tissot's "Les Bruyères" is a small parcel of 80 ares whose vines are around 45 years old on a Triassic clay terroir. Here again, Stéphane Tissot shows us the full extent of his talent by ageing this yellow wine, fabulous for its balance, depth and personality, for 6 years in whisky barrels. A complex, fruity wine. The Domaine Tissot boasts exceptional terroirs, such as Les Bruyères, La Mailloche, En Barberon, Curon. The domaine's aim is to maximize the expression of its terroirs: the 35 ha of vines are now cultivated using Biodynamic methods (Demeter certification) to let the soil live, to ensure that the grapes are free of chemicals, to enable fermentation using natural yeasts, and to reduce the amount of sulfur used in the cellar.
