El Botijo??is the brainchild of sommeliers-turned-nologists Fernando Mora and Mario Lopez. The grapes come from the Mario family's certified organic Las Cellas vineyard in Valdejalon, northeastern Spain. Winemaking in the region is thought to predate Roman colonization, and is ideal for the production of high-quality wines. These are the garagistes of the region, producing wines in small quantities and taking care at every stage of production, hand-picking grapes and adopting a "minimal" approach to production. The name El Botijo ??comes from the traditional Spanish water boat used in vineyards to quench the thirst of grape-pickers.
