Nicolas Raspiller Estate

Nicolas Raspiller is both a beekeeper and a winemaker — the bee appears on all his labels, a subtle yet powerful symbol of a philosophy that extends far beyond the vineyard: observe, listen, and never force nature. After fifteen years working alongside winemakers in Burgundy and Champagne—a long, hands-on apprenticeship far from the traditional paths—he founded his own estate in 2017 in Chaux, in the Hautes-Côtes de Nuits, armed with nothing but “his enthusiasm and interest in vines and wine.” A self-taught man at heart, he never followed the traditional academic path, which gave him a rare freedom: the freedom to experiment, innovate, and learn about plants—nettles, comfrey, horsetail, ferns, and meadowsweet—that can naturally heal the soil and vines. The transition to organic farming, which began as soon as he settled there, was certified in 2019. The estate now spans a few carefully selected hectares: the red Hautes-Côtes de Nuits across two high-altitude lieux-dits (Les Pollands, planted in 1975 at 350 meters, and La Vacherotte at 374 meters), a Bourgogne Aligoté of remarkable purity, and above all the Clos de Magny—his finest plot, with the hard limestones of the Upper Bathonian period in Corgoloin, vines planted in 1968, recognized by the Guide Hachette des Vins. Hand-harvested, whole-cluster fermentation in concrete tanks, malolactic fermentation in old barrels, aged for 10 months, racked by gravity, without fining or filtration—natural, indulgent wines, “without falling into an excessive ‘natural’ style.” Shipping to France and Europe via Ardoneo.

The 2025 Bourgogne Aligoté from Nicolas Raspiller is one of the purest in Burgundy — “natural and rich, without veering into an overly natural style.”

The color is a bright pale yellow. The nose reveals aromas of crisp white fruit, a hint of lemon, and a subtle floral note. The palate is lively and fresh, with a lovely mineral tension balancing a full-bodied texture; the finish is briny and lingering. Serve at 10–12 °C.

Organic Aligoté since 2019, Chaux, Hautes-Côtes de Nuits. Hand-harvested, native yeasts, unfined and unfiltered, vineyard management using plants (nettle, comfrey).
