Chante le Vent du domaine de la Noblaie is a white Chinon. This organic wine features citrus and floral notes. The domaine de La Noblaie was, a few hundred years ago, part of a polyculture complex where the land surrounding the estate was already reserved for the cultivation of vines, as shown on the Cassini map of 1765. Wine presses, cellars and vats carved out of the tufa rock bear witness to these bygone days. The ancient cultivation of vines has given its name to our hamlet: "Le Vau Breton" which, in Rabelaisian parlance, means "Valley of Cabernet Franc", the unique grape variety of Chinon's red wine.The wines of the domaine de La Noblaie are characterized by beautiful precision, soft tannins and lots of gourmandise. Pierre de Tuf is the emblematic cuvée of the Domaine de la Noblaie, signed Jérôme Billard in Ligré. Organic Cabernet Franc from two historic parcels - flinty clay and clay-limestone - whose vines are over 80 years old. Vinified in a 15th-century tufa stone vat, hand-punched with a wooden pestle, aged 20 months in barrels and amphorae. A silky, deep red Chinon, made for laying down - 3 to 15 years.
